Super Fast Thai Chicken Soup

Boil some water, add a chicken stock cube, throw in some freshly chopped bok choy, coriander, mint and add green chilli if you like things hot.

Buy a cooked chicken, pull off the meat and chop it into strips, add to the soup. Drop in some vermicelli rice noodles and a small can of coconut milk.

Cook for five minutes and you have a tasty soup.

 

 

Double Pea Salad

Boil some water and throw in a generous handful of frozen peas, they’ll be ready in just one minute.

Cool under cold water, add a tin of chick peas then chop some mint, baby spinach, rocket and spring onions and combine.

Drizzle a little olive oil and a teaspoonful of verjuice over the salad and mix to bind together.

 

 

Rainbow Pasta Salad

Cook a generous amount of your favourite pasta and run it under cold water to cool.

We used a multi-coloured selection but any pasta will do.

Add some chopped olives and semi sundried tomatoes from the local deli, chop up some celery and a red onion and you’ve got a healthy salad.

This one will keep in the fridge for a few days.

 

Quinoa Super Salad

Quinoa is a grain from South America that packed with energy, more than rice or potatoes.

Put one cup in a rice cooker with two cups of water.

Once all the water has absorbed, let the quinoa cool, then add all your favourite herbs and vegetables.

We used chia seeds, capsicum, celery, red onions, cucumber and grated pumpkin and some pistachio nuts.
